I'm trying to discover some lunch meals that meet the following four stringent conditions:

1. Cheap
2. Tasty
3. Simple
4. Healthy

Usually at least one (if not all) of the others is sacrificed for the "simple", because I just can't be arsed to spend a lot of effort on cooking, especially for my family of misfit toys picky eaters. But now I'm ready to try harder for better results, in the hopes of never again eating another bowl of Cheerios or Ramen noodles for lunch in utter desperation. Bonus points for things that can be made in batches and frozen, of course.

Here's the one I tried this week, to glowing results.

1/2 onion, diced
1 large can diced stewed tomatoes (chili flavoured for glorious extra-easiness)
1 large can black beans, drained
1 C frozen corn
1 C diced cooked chicken, if you simply must have animal flesh in there
1 1/2 C uncooked rice

Cook the rice, perhaps a little bit less than you normally would. While it's cooking, fry up the onion until clear, add the cans of tomatoes and beans, and finally the corn (and chicken if you want it). Let it simmer until the rice is done, then add the rice to the pan o' goodies. Stir, cover until heated through, and then rejoice! You have approximately one lunch for nine people, or nine lunches for one person, or four hearty lunches for two people. Yay!

I'll let you know if I find any other recipes that meet the Four Commandments.
